Franny's walnut, banana and carrot cake
Franny made this wonderful cake for my birthday. It's a delicious cake, not too sweet nor fatty. With a nice festive topping.
English version of the recipe:
For the ingredients you will need:
175 grams (6 ounce) of Demerara sugar
175 ml (6 fluid ounce (US)) sunflower oil
175 grams (6 ounce) of Carrot
2 ripe Bananas
55 grams (2 ounce) of Walnuts
280 grams (10 ounce) of Flour
1/2 teaspoon of Salt
1 teaspoon of baking soda
2 teaspoons of baking powder
The topping is optional.
You will need for the topping:
200 grams (7 ounce) of Cream cheese
1/2 teaspoon vanilla essence
100 grams (3.5 ounce) of powder sugar or icing sugar
25 grams (1 ounce) of walnuts
Warm the oven to about 180 degrees Celsius (350 Fahrenheit) and grease the baking tin with butter and then line it with grease proof paper. Mix the sugar, eggs, oil, carrots, walnuts and bananas in a bowl and then sieve the flour, salt, baking powder and baking soda over the bowl. Mix everything well and then pour it into the baking tin and bake for 60-65 minutes.
